Roast Chicken Breasts with Garbanzo Beans  
Spiced Oil:
  • 1/4 cup olive oil
  • 4 garlic cloves, pressed
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin

Sauce:

  • 1/2 cup plain yogurt

Meat and side dish:

  • 4 chicken breasts
  • 1 15 oz can garbanzo beans (drained)
  • 1 container cherry tomatoes
  • 1 cup cilantro, chopped (divided)
  • Salt and fresh ground pepper
  1. Mix spiced oil ingredients in a small bowl.
  2. Pour 1 teaspoon of spiced oil in another bowl and add yogurt and mix together for sauce and set aside.
  3. Rub 2 tablespoons of spiced oil mixture on chicken breasts and place on a large rimmed baking sheet..
  4. To the remaining spiced oil mixture add the beans, tomatoes and 1/2 cup of cilantro and toss.
  5. Pour bean mixture around chicken breasts and season with plenty of salt and fresh ground pepper.
  6. Roast chicken in 450 degree oven for 20 minutes.
  7. Remove from oven, cover with foil for 5 minutes
  8. Plate chicken and bean mixture on 4 plates and drizzle with remaining cilatro.
  9. Serve with yogurt sauce made in step 2.
