Spiced Oil:
- 1/4 cup olive oil
- 4 garlic cloves, pressed
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
Sauce:
Meat and side dish:
- 4 chicken breasts
- 1 15 oz can garbanzo beans
(drained)
- 1 container cherry tomatoes
- 1 cup cilantro, chopped
(divided)
- Salt and fresh ground pepper

- Mix spiced oil ingredients in
a small bowl.
- Pour 1 teaspoon of spiced oil
in another bowl and add yogurt and mix together for sauce and
set aside.
- Rub 2 tablespoons of spiced
oil mixture on chicken breasts and place on a large rimmed
baking sheet..
- To the remaining spiced oil
mixture add the beans, tomatoes and 1/2 cup of cilantro and
toss.
- Pour bean mixture around
chicken breasts and season with plenty of salt and fresh
ground pepper.
- Roast chicken in 450 degree
oven for 20 minutes.
- Remove from oven, cover with
foil for 5 minutes
- Plate chicken and bean mixture
on 4 plates and drizzle with remaining cilatro.
- Serve with yogurt sauce made
in step 2.
