1/2 Jicama diced |

3/4 cup black beans, drained |

tsp thai pepper (or jalapeno or serrano for the wimpy) finely
chopped |

teaspoon chopped mint |

1/3 cup chopped red onion |

Juice from one lime |

tsp rice vinegar |

kosher salt to taste |
Serves 4 as a side dish |
1. Combine all
ingredients in a wooden bowl and gently toss. |
