Mango Jicama Black Bean Salsa

2 Mangos diced
1/2 Jicama diced
3/4 cup black beans, drained
1 tsp thai pepper (or jalapeno or serrano for the wimpy) finely chopped
2 teaspoon chopped mint
1/3 cup chopped red onion
Juice from one lime
2 tsp rice vinegar
kosher salt to taste

Serves 4 as a side dish

1. Combine all ingredients in a wooden bowl and gently toss.
