Ginger Sesame Pork Chops with Grilled Pineapple  
Marinade
3   limes, juiced
1/4 cup sesame oil
1/4 cup soy sauce
3 tbsp grated fresh ginger
1/2 ea orange, juice
1/2 tsp orange zest
2 tbsp rice vinegar
2 tbsp extra virgin olive oil
1 tbsp dark brown sugar
1 ea bunch scallions trimmed
1 ea pineapple, cored and cut into 1/2 inch rings

Chops

4   boneless center cut pork chops, about 3/4 inch thick
    kosher salt
    fresh ground pepper

Serves 4 as a main dish

Combine marinade ingredients (except for scallions and pineapple rings) in a bowl and mix well.

Place chops, scallions and pineapple rings in a 9X13 pan and pour marinade over. Turn chops to coat and place in refrigerator to marinate for 45 minutes, turning the ingredients from time to time.

Remove pork, pineapple and scallions from marinade. Season pork with salt and pepper.

Grill pineapple, pork and scallions on a hot grill. Scallions take around 1 minute per side, pineapple around 2 minutes per side and the pork 3-4 minutes per side.
